White Sauce

1 tbsp. margarine
1 clove garlic, chopped
2 tbsp. flour
1 cup plain soy milk
salt and cayenne pepper

Melt the margarine in a small saucepan over medium heat. Add the garlic and stir for 1 minute; do not brown. Stir in the flour to make a thick paste and cook, stirring rapidly, for 1 minute. Pour the soy milk in slowly, stirring to avoid lumps. (If you get lumps, pour it all in the blender, puree it smooth, and pour back into pan.)  Cook and stir a few minutes until thick. Add a pinch of cayenne and salt to taste.
