Springfield Sweet Potato Pie

Yield: 6 servings
4 med. Sweet Potatoes, peeled and boiled
1 cup Sugar
2 Egg replacers of choice (try 4 tsp. Egg replacer powder mixed with 4 tbsp. Water)
1/4 cup Margarine
1/2 cup Rice milk
1 Banana, mashed
2 tbsp. Flour
1/2 tsp. Baking powder
1 tsp. Vanilla
1/2 tsp. Cinnamon
1 Pie shell, unbaked (9 inch)
In a large bowl, combine all the ingredients except the pie shell and mix
thoroughly, using a mixer to get the fluffiest consistency. Transfer the mixture to the pie shell. Bake the pie at 350 for 45
minutes or until light brown.
